For some, surviving a Seattle winter means heading to Washington’s snow-covered slopes. Others jet off to someplace full of blue skies and sunshine. At our downtown Seattle restaurant, we think the best fortitude for winter comes with spirits. So, we asked our bar team to assemble five essential winter cocktails, including a punch for your party needs, these cocktails are easy to make and guaranteed to bring a little sunshine to your glass.
Sherry Bucks the Stars

1 oz Lustau Fino Sherry
.5 oz Fernet
.5 oz Grind Espresso
.25 oz Demerara simple syrup
4 dashes of Cinnamon Tincture
Garnish: Cinnamon Stick
Combine all ingredients in mixing glass, add ice and stir. Strain into a cocktail glass and garnish.
Under The Mistletoe

1.75 oz Armagnac
.5 oz Fresh Lemon Juice
.5 oz Clear Creek Cranberry Liqueur
.25 oz Cinnamon-Maple Syrup
Garnish: Cranberries
Combine all ingredients in a mixing tin, add ice and shake. Fine strain and garnish.
Cinnamon-Maple Syrup
1 cinnamon stick
12 oz Maple Syup
Add cinnamon stick to maple syrup and let it steep for 48 hours.
Winter Holiday Punch

1.5 oz Park Cognac
1 oz Fresh Lemon Juice
.75 oz Cherry Jus Infusion
.25 oz Simple Syrup
1 oz Soda Water
Garnish: Lemon and Brandied Cherry
Combine all ingredients but soda in a mixing tin, add ice and shake. Fine strain into a cocktail glass, top with soda and garnish.
Cherry Jus Infusion
Add clove, anise and cinnamon and let it steep for 48 hours.
The Godfather Too

2 oz Ardbeg, or other Islay Scotch
.5 oz Amaretto
2 dashes Angostura Bitters
2 dashes Orange Bitters
Garnish: Orange Peel
Combine all ingredients in mixing glass, add ice and stir. Strain into a bucket glass, add ice and garnish.
Toshi’s Party Punch

10 oz Dark Rum
6 oz Jamaican Rum
8 oz Applejack
6 oz Pommeau
40 oz Black Tea
8 oz Fresh Lemon Juice
16 oz Oleo Saccharum*
8 dashes of Old Fashioned Bitters
Garnish: Apple Slices, Grated Cinnamon and/or Nutmeg
Combine all ingredients in a punch bowl. Add ice. Garnish.
*Oleo Saccharum
Add peels from 3 lemons and one orange
8 oz white sugar
8 oz hot water
Combine sugar and peels. Add hot water and stir until sugar is dissolved.
